✓ 1 tbsp olive oil
✓ 1 small onion, diced
✓ 1/2 green bell pepper, diced
✓ 2 garlic cloves, minced
✓ 1 bag BeanStalk vegan crumble
✓ 3/4 cup ketchup
✓ 1 tbsp tomato paste
✓ 1 tbsp brown sugar
✓ 1 tbsp yellow mustard
✓ 1 tsp vegan Worcestershire sauce
✓ 1/2 cup water or vegetable broth
✓ 1/4 tsp salt
✓ 1/4 tsp black pepper
✓ 4 hamburger buns
INSTRUCTIONS
1. Sauté the Vegetables
Heat the olive oil in a large skillet over medium heat. Add the diced onion and green bell pepper and sauté for about 4–5 minutes, until softened.
2. Cook the Crumble
Add the minced garlic and cook for about 30 seconds until fragrant. Add the BeanStalk vegan crumble and cook for about 5 minutes, breaking it up with a spoon as it browns.
3. Add the Sauce Ingredients
Stir in the ketchup, tomato paste, brown sugar, yellow mustard, vegan Worcestershire sauce, and water or vegetable broth. Mix well until all the ingredients are evenly combined.
4. Simmer Until Thickened
Bring the mixture to a gentle simmer and cook for about 8–10 minutes, stirring occasionally, until the sauce thickens and coats the crumble. Season with salt and black pepper to taste.
5. Toast the Buns
While the filling simmers, toast the hamburger buns if desired until lightly golden and warm.
6. Assemble and Serve
Spoon the hot Sloppy Joe mixture generously onto the bottom halves of the toasted buns. Top with the remaining bun halves and serve immediately.
Recipe Tips
Simmer the filling a little longer for a thicker, richer sauce. If the mixture becomes too thick, add a splash of water or vegetable broth. For extra heat, stir in a dash of hot sauce or a pinch of red pepper flakes. Leftover filling keeps well in the refrigerator for up to 4 days.
