✓ 1 package BeanStalk Chickn Bites

✓ 1 cup quinoa, uncooked

✓ 1 cup shelled edamame

✓ 3/4 cup carrots, thinly sliced or julienned

✓ 1 cup mushrooms, sliced

✓ 1 cup snow peas, trimmed

✓ 3 green onions, sliced

✓ 1/4 cup soy sauce

✓ 2 tsp sesame oil

✓ 3 garlic cloves, minced

✓ 1 tbsp neutral oil for stir-frying

✓ 1 tsp sesame seeds, for garnish


INSTRUCTIONS

1. Cook the Quinoa

Rinse the quinoa thoroughly and cook according to the package directions, usually using a 1:2 ratio of quinoa to water. Simmer for about 15 minutes, then remove from the heat and fluff with a fork. Set aside.


2. Cook the Chickn Bites

Prepare the BeanStalk Chickn Bites according to the package directions by baking or air-frying until hot, crispy, and golden. Allow them to cool slightly, then chop into bite-sized pieces.


3. Make the Garlic-Sesame Sauce

In a small bowl, whisk together the soy sauce, sesame oil, and minced garlic until well combined. Set aside.


4. Stir-Fry the Vegetables

Heat the neutral oil in a large skillet or wok over medium-high heat. Add the carrots, mushrooms, and snow peas and stir-fry for about 4–5 minutes, until the vegetables are crisp-tender while still retaining some bite.


5. Add the Chickn and Sauce

Add the shelled edamame and chopped BeanStalk Chickn Bites to the skillet. Pour over the garlic-sesame sauce and toss everything together for about 2 minutes, until heated through and evenly coated.


6. Assemble and Serve

Divide the cooked quinoa between two bowls. Top with the saucy vegetable and Chickn Bites mixture, then garnish with sliced green onion and sesame seeds. Serve immediately.


Recipe Tips

Swap in your favorite vegetables—broccoli and bell peppers are great additions. For extra heat, add a drizzle of sriracha or a pinch of red pepper flakes to the garlic-sesame sauce.
