Pulled Shredz Fajitas

INGREDIENTS

 1 package Pulled Shredz

✓ 6 medium tortillas

✓ 1 large yellow onion, sliced into strips

✓ Bell peppers, sliced into long strips

✓ 3 cloves garlic, finely chopped

✓ 1 teaspoon cumin

✓ 1 teaspoon paprika

✓ 1 teaspoon chili powder

✓ 1 teaspoon garlic powder

✓ 1 teaspoon black pepper

✓ or 1 1/2 tablespoons taco seasoning

✓ 2 limes

✓ 3 tablespoons avocado oil, divided

✓ 2 tablespoons soy sauce

✓ Optional Toppings

✓ Shredded vegan cheese

✓ Guacamole

✓ Pico de gallo

✓ Chopped jalapeños

✓ Chopped green chiles


INSTRUCTIONS

1. Thaw The Pulled Shredz

Remove the Pulled Shredz from the freezer and let it thaw. You can thaw it overnight in the refrigerator or let it sit out while you prep the rest of the ingredients.


2. Marinate The Shredz

In a large bowl, combine the juice of 1 lime, soy sauce, 1 tablespoon avocado oil, and all seasonings. Add the Pulled Shredz and mix well to coat. Let marinate for 20 to 30 minutes.


3. Prep The Vegetables

Slice the bell peppers into long strips, slice the onion into strips, and finely chop the garlic.


4.  Cook The Shredz

Heat a large skillet over medium-high heat. Add 1 tablespoon avocado oil, then add the marinated Pulled Shredz along with the marinade and chopped garlic. Cook until heated through and most of the sauce has cooked off. Remove from the skillet and set aside.


5. Cook The Vegetables

In the same skillet, add the remaining 1 tablespoon avocado oil. Add the onions and peppers and cook for a few minutes, stirring occasionally, until tender-crisp and still holding their shape.


4.  Assemble & Serve

Return the cooked Shredz to the skillet if desired and toss gently with the vegetables, or serve separately. Warm the tortillas, then fill with the Shredz and veggies. Finish with a squeeze of fresh lime juice and your favorite toppings.


Tips:

  • If you want a little extra heat, add cayenne or sliced jalapeños to the marinade.
  • Don’t overcook the peppers and onions — they’re best when they still have a little bite.
  • These fajitas are great for serving family-style so everyone can build their own.
